WHERE ARE MY FELLOW PIZZA LOVERS?
I made a cheesy sauce today (recipe to be found thehappypear ) and added it on a very QUICK, HEALTHY, DELICIOUSSSSSSS PIZZA I made for lunch.
I know I know pizza dough has to prove for AGES but honestly who wants to wait when you’re hungry..
so just mixed some wholemeal bread flour with water, salt and herbs and topped it up with garlicky tomato sauce, spinach, shrooms and the sauce!!
The sauce is mainly made of potatoes and carrots but the stringiness and cheesiness comes from the tapioca starch+nooch+sunflower oil

CRISPY RICE FLOUR DUMPLINGS
I experimented with rice flour today and these little cuties were really tasty!
I also fried some chopped butternut squash, some kind of dark green leaf thing, courgette with garlic and onion and added some oatly creme and miso paste, nutritional yeast, mustard, as well as chili + ginger and it was SO good.
for the dumplings u need:
2 cups water
1 cup rice flour
salt + seasoning
Bring water (+ salt/ginger/chili) to boil and add the flour – stir vigorously to avoid lumps. Let the dough cool down and then shape into balls and coat in sesame seeds. I steamed them for 5 min and then fried in some sunflower oil + soy sauce
Served with my veggies and a homemade dressing:
tahini+soy sauce+apple cider vinegar+sesame seeds

it’s the PERFECT post or pre workout snack, super high in protein and carbs and super delicious with a cuppa or some coffee.
1/2cup chickpeas
5 tbsp oat flour (or oats)
1 tbsp vanilla protein powder
1 large tbsp peanut butter
1tbsp maple syrup
dash of salt
dash of water
Blend everything together and add raisins or chocolate chips
I rolled the dough out flat and spread a mix of
oatly creme fraiche, vanilla and maple syrup on top. Rolled up and cut into little pieces!
Melted some dark chocolate on top
You can also bake them- will be delicious too

I love all the warming and indulging spices – ginger, allspice, cloves, cinnamon, turmeric, cardamom plus some sea salt it’s the best.
What do you like to put in your porridge? Or on top?
Peanut butter is as always a MUST. It has become non negotiable. Plus some fruit and my breakfast is perfect

Had to treat myself to this little cheeky jar of loveliness today.
Right now it’s chucking it down outside and I’m craving soup now, but this was MUCH NEEDED earlier.
cinnamon cookie dough balls:
4 large dates (soaked in water)
handful raisins (optional)
2 tbsp oats
1/3 cup chickpeas
cinnamon
maca powder
vanilla powder (or protein powder)
blend together and roll into little balls:)
NICECREAM: a blend of 2 bananas and ~5 florets of frozen cauliflower, splash of oat milk, maple syrup and vanilla protein powder
topped with cookie dough balls, dark chocolate and manilife_ PB

this tart was/is SO good – you need someone to pull you away from it. Juicy, savory, sweet, fruity, tangy… Can’t even describe in words.
I had like 10 apples lying around and wanted to make a PRETTY tart and ended up just stuffing the slices onto the crust bc apparently I’m not an artist at all
Anyway- simply used:
270g oat flour
1 tsp baking powder
1 tbsp coconut oil
– cold water
(didn’t measure but not too much as the dough has to be sticky enough to form a crust
6 large apples
4 to slice
2 to cook and blend with cinnamon/cardamom/2 tbsp maple syrup/ 2 tbsp apple cider vinegar/dash of water
Press the crust into a tin, add the blended apple cinnamon mix and then add the sliced apples on top.
I baked it in the oven for about 35 min to make the apples really soft (200°).
Can highly recommend making

The QUICKEST & EASIEST meal ever !
Simply heat up a nori sheet and add your sandwich fillings of choice right in the MIDDLE of the sheet. Simple fold all 4 edges/corners and CUT IN HALF.
I filled my nori wraps with
raw tofu (I love it)
avocado
cucumber
tomato
miso paste
pesto
If you have sushi rice I’d recommend adding that too!

Haven’t had waffles in SO long and as it was my birthday today it was about time to reintroduce them
Used mealsbymiri’s recipe for a single serve waffle but doubled it;)
Topped with soy yog, berries, banana, peanut butter meridianfoods, pumpkin seeds, cinnamon and quinoa pops
I struggled a lot today with eating (and overeating/eating fear foods aka.chocolate) even though it’s my birthday and it made me realise how much work I still have to do when it comes to my ED.
So keep pushing, keep working, but most importantly – keep eating and relaxing and ENJOYING life
