Super super quick and easy to make and so NOURISHING & likewise goooood for body & soul.
1 cup raw cashews (not soaked)
1.5 cups coconut flakes
4-5 tbsp coconut cream
(top of the milk tin)
dark vegan chocolate
Blend the cashews and coconut flakes together until flour-like consistency. Add the coconut cream and blend until you’ve got a thick smooth mixture.
shape into squares/balls/ovals any shape you like and let sit in the fridge or freezer for a while.
melt dark chocolate and decorate to your liking

When I eat fairly healthy for a while, meaning like wholefood plant based, I always get those cravings for processed vegan fast food like Papa John’s pizza and once that craving is gone I can RELY on my body signalling me it wants veggies again.
After years of disordered eating I feel like I’ve reached a point now where I can actually give in to my body’s cravings, despite my brain still telling me it’s “bad” or shouldn’t be eating this.
Today though I had this nourishing lunch bowl consisting of sweet potato, yellow pepper, carrots, chickpeas and spinach leaves, in a creamy sauce made of coconut yoghurt and tinned tomatoes. Added lots of spices like chili, garlic, ginger and cumin and it was tasty.
All served with red quinoa

To make my oats super thick and creamy I usually add 1 tbsp flax seeds, chia seeds (each) and my fav vivolife vanilla protein powder

I love hummus and everything CHICKPEA related anyway but this I will definitely have more often now.
Smash chickpeas in a bowl with some lemon juice, miso paste and herbs and have on toast. So easy and delicious.
Plus adding avocado, tofu, chili and fresh herbs

Topped up with peanut butter, a little gingerbread men, clementine, quinoa pops, blackberries and bit of leftover banana

I saw a video on besondersgut’s account how to use 8 strands to make a braid and I was intrigued to try it. I used a different recipe for the dough though (that I found on the oh so glorious internet).
I used 400g mix of plain flour and wholemeal bread flour, 1 bag of yeast, lukewarm water & oat milk until it was firm enough and 1 tbsp coconut sugar.
Then let it prove for 1h
I brushed it before baking with a mix of oat milk & maple syrup.
