I’m VERY grateful for my little community and your support – this account truly brings me joy and I hope to inspire some of you to eat more plants or get creative with food as it’s NOTHING to be afraid of.
I’m excited for next year and new things to come.
Deats:
4tbsp oat flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tbsp vanilla protein powder
1tbsp maple syrup
1/3 cup oat milk or water
1/2 chopped medium apple
1tbsp peanut butter – filling
some white choc chips on top
Mix everything together except for the peanut butter and choc chips.
Bake for 25 min at 180°degrees.

I made these out of 2 ripe bananas, few tbsp maple syrup and 1/2 cup oat milk – then added buckwheat flour (2/3 cup) and coconut flour (1/3cup), some coconut flakes and added 1 TSP of lotusbiscoffuk spread in the mix. Plus half a lotus cookie on each single muffin (6 in total).
So tasty and perfect with a cuppa or afternoon coffee

These are just some random chocolate cookies I made from plain-, oat- and buckwheat flour. Mixed with cocoa powder, maple syrup, flax seeds and oat milk.
Decorated with icing sugar, goji berries, puffed quinoa & cocoa nibs

I made a freaking delicious VANILLA CHEESECAKE today
Not a raw one, a perfectly baked one and it took me a maximum of 15 min of preparation before I shoved it into the oven
The crust is a blend of a
handful pitted dates, mixed nuts, oats and cocoa powder (and a dash of water) – pressed into a round cake tin thing.
the cheesecake mixture is 1 bag of silken tofu (350g), a handful cashew nuts, splash of oat milk, vanilla (protein) powder and maple syrup
So easy peasy and deliciousssssss.
I decorated with apple hearts and baked it for ~40 min (200°) until golden brown.
