COCONUT-CARAMEL-CHOCOLATE BARS 

I mixed something together the other night and it turned out AMAZING!!!

unfortunately I didn’t measure anything but the base layer is a mix of

coconut flour/coconut flakes/maple syrup and soy yoghurt

plus a decadent layer of peanut butter mixed with date caramel, puffed quinoa and melted chocolate on top.

It’s SO delicious  I love trying new things…

Who said vegan food is boring?

I got inspired by the_vegan_buddhist’s last post and had to make some falafel today as well 

Homemade baked falafel are super easy to make and so rich in protein.

For today’s turmeric spiced falafel I used:

1 can chickpeas +
2/3 of aquafaba (chickpea water)
Juice of half a lemon
100g chickpea flour
1 TSP turmeric powder
1 TSP garlic powder
1tsp dried parsley
1 tbsp garam masala
salt & pepper
chili flakes
chopped garlic/onion who fancies

Blend or mash everything TOGETHER, shape into balls and bake in the oven for about 30min (180°-200°)

Served my falafels with sliced toasted pita bread, red cabbage, avocado, courgette spaghetti, sweetcorn, baby tomatoes, green olives and a homemade garlicky yoghurt dip

I always need to be able to quickly grab a snack between work or before/after a workout and those cuties are PERFECT to give me the required energy to help me through the day.

I love energy balls because they are so easy to make and are also super nutritious.

 INGREDIENTS (makes 8)

1 cup dates
1/3 cup coconut flakes
2-3 tbsp tahini
splash of plant milk
sesame seeds

Blend everything together except the sesame seeds and shape into little balls. Then coat in sesame seeds.

my new favourite finger food 

I can promise you won’t regret making them, super quick to make.. fairly healthy and just so delicious.

All you need for the batter

120g (chickpea) flour
~120ml water
roughly same amount, depending on how thick you want the batter to be
1 tbsp salt
1tbsp garlic powder or finely chopped garlic
1 tbsp fajita seasoning (or spicy seasoning of choice – smoked paprika for example)

Mix together. I coated around 12-13 medium/large white mushrooms in it until completely covered in batter.

Then rolled them in bread crumbs (I simply blended old stale bread -perfect for zero waste) and baked for 30-35 min (180-200°).

Serve with dip of choice
(I forgot how much I love ketchup)

CREAMY, MOUTHWATERING, SOFT BISCOFF CHEESECAKE CUPS 

These are honestly so good and a year ago I wouldn’t have allowed myself to eat or make them because I would have labeled them as unhealthy. So happy I can now enjoy food freely.

Makes 6:

Base layer:

~80g oat flour
-1 large tbsp syrup of choice
-1 TSP cinnamon
-dash of lemon juice
-plant milk to mix together

Middle layer:

-150g silken tofu
-50g lotusbiscoffuk spread
(~2-3 tbsp)
-1 TSP cinnamon
-1 TSP (coconut) sugar
-dash of plant milk

2-3 lotusbiscoffuk cookies to crumble on top

Mix the base layer ingredients together and press into muffin tins.

Blend the cheesecake ingredients and pour on base layer

Freeze for 2h

Crumble cookies on top and enjoy

If you haven’t tried frying bananas in coconut oil and syrup you definitely should do so soon. It makes every boring plain porridge bowl  more exciting.

My other fav toppings : peanut butter for ever and ever, frozen berries (or warm) and hemp seeds.

SWEET POTATO & CHOC CHIP COOKIE DOUGH for you –

definitely fulfilled my wildest dreams 

Recipe below today:

1 small sweet potato
1/3 can chickpeas
3 tbsp oats
1 tbsp peanut butter
1 tbsp maple syrup
1 tbsp vanilla protein powder or drops of vanilla essence
1 TSP salt
1 TSP cinnamon
1 splash of (hazelnut) milk

-chocolate to go on top

Blend everything together and serve with chocolate chips on top and if you want to take it up to another level even- add more milk on top 
Hazelnut works REALLY well but any other should be fine.
