RAINBOW BUDDHA BOWL
When I can’t decide what to eat, the best thing to do is create a colourful Buddha bowl that offers a variety of different things.
Today I went for wholewheat couscous, store bought falafel, tofu with tomato/harissa marinade, chickpeas, kidney beans, tomatoes, red cabbage and homemade sunflower pesto, all assembled on a bed of green leaves and with pumpkin seeds and tahini drizzled on top.
Easy and nourishing
For the pesto I blended:
1/3 cup sunflower seeds
2 cloves garlic
1 handful basil leaves
1/2 juice of lemon
2 tbsp nutritional yeast
& salt

PEANUT BUTTER CHOC CHIP PROTEIN BLONDIES
– to satisfy your sweet tooth while also providing healthy fats, carbs and protein
Let me know if you gonna make them
Ingredients:
1/2 can cooked chickpeas
20-30g cashew nuts (1 handful)
4 large tbsp peanut butter
2-3 tbsp maple syrup
1 tbsp vanilla protein powder (optional)
300ml oat milk
70g oat flour
80g buckwheat flour
1/2 tsp baking powder
choc chips on top
Blend first 6 ingredients and add to flour and baking powder. Mix well and pour in a baking sheet.
Sprinkle choc chips on top.
Bake for 20-25 min (200°).

I have become a massive fan of silken tofu, it’s so versatile and perfect for all creamy desserts and sauces.
Mixed with blueberries, vanilla and cardamom – what a combination.

I made this delicious CHOCOLATE PUDDING, topped with raspberries and white chocolate
I think a lot of people posted the recipe but I first saw it on sovegan’s account
I used:
250g silken tofu
2tbsp maple syrup
3tbsp cocoa powder.
Simply blend and let sit in the fridge for a few hours to thicken.
Then add toppings if you want

I am so lucky to create recipes for nayu.app and this was one of them. For all my German ers – you should definitely check it out
I simply cooked some quinoa and mixed it with fried veg, tofu, some oatly creme fraiche and stuffed my peppers with it. Then sprinkled some nutritional yeast on top and baked in the oven for ~40min until soft.
It’s such a comforting and healthy meal.

SPINACH & CREAM CHEESE WRAP ROLLS
All you need is
1cup chickpea flour
1/2 cup tapioca starch
1 cup water
spices (salt/pepper/nooch/herbs)
1 handful spinach/kale
Simply blend all the ingredients and fry in a pan with some oil. Then spread some vegan cream cheese on top, some sliced thin carrots and roll up.
Doesn’t sound fancy but it is super delicious and you can obviously fill with whatever you like
