CHOCOLATE TRUFFLES
with sea salt – and let me tell you, I personally think it’s the cherry on top.they are sooo good and so incredibly easy to make.
No measurements again as they were created in a spur of a moment.
But they consist of :
dates, oats, cocoa powder, chopped hazelnuts and almond butter blended together and rolled into balls. Then dunked into some melted dark vegan chocolate and for that extra note but totally optional – sea salt.
Keep in the fridge or freezer

PEANUT BUTTER & OAT COOKIES
I don’t know how people manage to “only” eat main meals. I always need snacks and those cookies are perfect to stay energised during the day, especially when working on a computer all day longgg.
I simply mixed oat flour with peanut butter, maple syrup and some raisins in a bowl, flattened out, added some chocolate on top and chucked in the oven for 20 min.
Yummyness guaranteed

HOMEMADE POTATO GNOCCHI
with the most delicious kale and sunflower pesto !!
I still feel so lucky to be creating recipes for nayu.app as it makes me try new things and get out of my comfort zone (meaning cooking other things than porridge).
The pesto is a blend of a handful uncooked kale, sunflower seeds, olive oil, salt, nutritional yeast, lemon juice and garlic
Please try if you have a chance

The crust is made of buckwheat flour, olive oil, salt and water.
The filling is mainly chickpea flour, some firm tofu, nooch, turmeric powder, mustard, apple cider vinegar, water, smoked paprika and herbs. Mixed with fried bacon strips (vivera_uk ), leek and red pepper.
Then poured onto the crust and baked in the oven until firm and slightly golden.
I didn’t measure anything as it was a spontaneous cooking action
