RAW CARROT CAKE EASTER EGG ENERGY BALLS
okay clearly didn’t know what to call these ehehe
scrumptious and indulgent little Easter treats to celebrate spring and nature awakening
1 cup oats
3 tbsp almond butter (meridianfoods)
1/2cup dates
1/2 cup coconut flakes
1.5 medium carrots – grated
splash of oat milk
Blend everything except the grated carrot and then mix together. Shape into balls.
I decorated with some coconut yoghurt and little carrot flowers:)

This amazing pesto only requires 5 main ingredients and it’s so delicious. Especially on a slice of bread or on pasta
Ingredients:
70g pumpkin seeds
20g fresh parsley
Juice of 2/3 of a lemon
2 medium cloves garlic
2 TBSP olive oil
5 TBSP water
pinch of salt

Cauliflower is not only delish, it is full of antioxidants, fibre and vitamins and fights cancer cells. How awesome is that?
Even more awesome that you don’t have to kill chicken in order to enjoy some spicy Fingerfood
Here is a super easy lazy version for you:
1 medium cauliflower – florets
120g chickpea flour
140ml water
chili, smoked paprika, salt/ pepper/herbs/garlic powder
15g nutritional yeast
Mix everything together except the florets to make a batter.
Then coat the florets and bake in the oven for 35-40 min.
Use leftover batter to flip the wings and coat the florets again after about 20 min and bake for 15-20 min. more.
Optional: use other flour and add tomato puree if you want:)

I have tried a new recipe today and it’s absolutely BOMB. I will have to refine it just a little bit more and I will drop it in the weekend I promise!
But let me tell you this: they are gooey and fudgy and you can’t taste the beetroot all and they are gluten-free!!
So I will let you drool a little bit for now hehe.

It’s officially spring and even though I love a hearty and comforting meal more than anything, I do now crave lighter meals and lots of different fruits and veg..
This was my colorful lunch plate today: brown rice, tofu fried with pepper, miso paste, and fresh parsley, plus some olives, red cabbage, radish, courgette, spring onion, sunflower seeds and some yoghurt on top!

I just wanted to say thank you to all of you supporting me on this platform and engaging with me on a regularly basis. I feel close to some of you already though we’ve never met personally.
Lockdown 2 and 3 have hit me particularly hard as they’ve (and still do) prevented me from going home to Germany on Christmas and now over Easter to see my family (yes I’m German ).
Creating content for you and me is so much fun and distracts me from some serious homesickness and general mental health issues. I love being creative and I am happy that you seem to enjoy it too.

my boyfriend always looks at me like I’m crazy when I grate courgettes into my porridge and even more when I sprinkle some salt in it.
BUT let me tell you. A pinch of salt in your porridge and then adding some sweet toppings brings your breakfast to a whole new level !
