HIGH PROTEIN LENTIL TART

Swipe for the filling 

you know when they say, vegans won’t get enough protein? Can’t hear it anymore  here’s a super delicious and easy meal idea that will cover your daily protein dose for sure.

The tart dough is made of flour and brokkoli. I blended like 60g of brokkoli and added it to my flour. As it is super moist it barely needs liquid to form a dough.

The filling is made of boiled green lentils mixed with tomato puree, miso paste, herbs and a bit of soy creme.

I added tomato slices and applewood_cheese on top and baked it in the oven for 30 min

I love spring so much. Everything is awakening.

Here’s a fun snack/dessert idea:

Sweet berry bagels with pink sugar glaze!

All you need is

1/2 cup yoghurt
2/3 cup flour
handful of (frozen or fresh) mixed berries
splash of plant milk
2tbsp (maple)syrup

blend milk, yoghurt and berries until smooth, then add the flour until you can roll out a dough.

shape into donuts, brush with some(vegan) butter and bake for 20 min.

For the glaze I used icing sugar which I mixed with some beetroot juice for the colour:-)

Ever wondered what to make with that polenta that’s been sitting in the cupboard forever? 

Make some pizza 
I simply added hot water to my polenta until you’ve got mash, then added some spelt flour (any flour will do) and some salt until I had some what of a dough;) you could also just add more polenta too instead of flour.

I topped with applewood_cheese, homemade pesto, tomatoes, tom.sauce and finnebrogue_naked bacon

There’s something about adding cocoa powder to my porridge that really makes me smile in the morning!!

How do you like your oats the most?

I always add some flax/chia seeds to my porridge to make them extra thick

I had some store bought short crust in the fridge so decided to have some savory croissants.

I saw the idea on laurafruitfairy account, filling them with pesto.

VEGAN CHOCOLATE AND MILK SANDWICH AKA.”MILCHSCHNITTEN”

I grew up demolishing these milk sandwiches which are called “Milchschnitten” in Germany.

I tried a healthier vegan version today and they are so good. Of course they don’t taste like the original but I think they’re even better 

Ingredients (make 4)

90g buckwheat flour
15g cocoa powder
1/2 TSP baking powder
2 Tbsp coconut sugar
150ml oat milk

Mix together and bake for 20 min (180°).

Milk Cream:

100g cashews, soaked and drained
2tbsp maple syrup
1tsp vanilla essence
50ml oat milk

Blend and put aside in the fridge.

Once the cake part is baked, cut into 8 squares, add the cream in the middle of 4 squares and top up with the other halfs.

Keep in the freezer or fridge (couple days).

Super easy and so tasty. You can add all of your favourite spices and make it super deluxe extra delicious…

I served mine with a sour cream dip and some ketchup, as well as fried mushrooms and some parsley on top!
