They are so easy to make and a perfect lunch or dinner idea.

My folding “skills” deffo need some work but they tasted good anyway;)

Filled mine with rice noodles, cucumber, avocado, tofu and red pepper 

Plus a super tasty peanut-soy-sesame-lemon-ginger-chili dip

Cardamom is such an underrated spice but it’s my favourite one. I love the flavour and its always soothing and relaxing me in a way.

I got inspired by a recipe from thymeandlove but changed some ingredients ever so slightly:-)

CHESTNUT ALMOND BARS with GINGER JAM 

ohhh wish you could try these. So so flavourful and deliciousssssss. I used cooked chestnuts for the base layer and I am just absolutely in love with the flavor.

I was also given some spicy ginger jam which I added too and it works : Heavenly.

Base layer:

120g cooked chestnuts
20g almond butter
1 tbsp (sugar beet) syrup
two handful quinoa or rice pops

Then a layer of ginger jam plus some chopped almonds and melted dark chocolate on top.

Some golden milk powder on top because fancyyyy

I made some EMPANADAS today with a CURRIED CHICKPEA & COURGETTE FILLING 

It’s a super nice holiday, weekend or party treat in my humble opinion hehe. You can stuff them with anything you like.

I mixed white wheat flour and buckwheat flour and added some yeast and salt for the dough.

For the filling I grated 1/2 courgette and mixed it with 2/3 can of (smashed with a fork) chickpeas. Then added curry powder, salt and herbs 

It was really TASTY!

Stop buying granola, save your money and start making your own 

It’s so so easy and I know many of you do it already.

For nayu.app I created a batch of homemade granola made with lots of spices like ginger, cardamom, cinnamon, cloves etc.

INDULGENT GRANOLA CHOC FUDGE BARS 

starting the new week with this gorgeous treat.

Choc meets granola – a match made in heaven. Super yummy.

Base layer:

1 cup oat flour
1/2cup oats
2-3 dates (blend with water)
1/2 cup ground (mixed)nuts
1-2 TBSP coconut oil
splash of water

Choc Fudge:

~150g silken tofu
(can use coconut cream)
1.5 tbsp cocoa powder
 optional: choc chips or melted choc
3-4 tbsp smooth (pea)nut butter
3tbsp maple syrup

Prepare both mixtures, then layer both on top of each other. Leave in the fridge or freezer to set for 1h.

Once it’s set, cut into bars and sprinkle some granola on top.

How much time do you spend wishing you’d be someone else or be LIKE someone else?

Comparing ourselves to other people is totally normal, but not if it becomes an obsessive behaviour which makes you feel less worthy, sad, depressed and you start hating yourself.

It’s not an easy journey to get to a point where you can be appreciative of what other people have/what they look like without questioning your own path/looks/value. 

I certainly have to learn a lot to finally get there but I try to focus on my own talents/strengths and passions whenever I want to be/look like someone else.
