SAVORY BROKKOLI CAKES

here’s a super delicious and easy appetizer/snack idea. Super healthy and ideal in a burger or with a salad.

Blend:

1small brokkoli (incl. stem -peeled if preferred)
2 cloves garlic
2 tbsp nutritional yeast
2tbsp flax seed
salt /pepper/seasoning of choice
splash of water

Once done add some flour (I used gluten free white flour) until you can form patties.

Fry in a pan with some olive oil and serve hot !

7 Ingredients only for this super easy afternoon treat.

base:
oats, almond butter, dates

cream Layer:
soaked cashews + water, maple syrup, vanilla extract (or sugar)

topped up with rhubarb and baked for ~25 min!

Vanilla and Rhubarb is a BOMB COMBO

Therefore I couldn’t resist making a coffee flavoured treat !!

Base layer:

oat flour
soaked dates (blend + add to flour)

Coffee Cream:

1 cup soaked cashews
1 shot espresso
2 tbsp maple syrup
Splash of plant milk
cocoa powder (optional)

Topped up with melted dark chocolate

No food post today but rather something that is in a way much more important to me and should be important to all of us.

I feel passionate about our planet, about the environment and our future, because I want MY KIDS and MY GRANDKIDS to grow up in a world where they indeed HAVE a future.
Have a chance to live in peace and harmony, value nature and each other and take care of all living things.

It is OUR responsible to show appreciation for this wonderful planet that we call our home.

Too many things are taken for granted and people and animals are exploited so we can enjoy the comfort in our own little bubbles.

This HAS to stop. We have to start seeing things from outside our comfort zone, the negative impact a certain way of living has on others, our planet, the animals.

It’s always better to REDUCE and make small changes – noone is perfect

SMALL CHANGES HAVE AN IMPACT. But it starts with you:

Believe it or not, YOU are part of this planet and like you, all human beings deserve food, water, a future, nature, a good environment, peace !

CHOC CHIP MINT TREAAAT 

I was craving Aftereight this morning (do you know those?) so got inspired by danishealthyeats to make something similar flavour wise:)

base layer is:

120g buckwheat flour
1 tsp baking powder
3 tbsp flax seed
3 tbsp coconut sugar
15g cocoa powder
250ml plant milkThe frosting on top is200g silken tofu mixed with some soft vegan butter,
peppermint essence, lots of maple syrup & tiny bit of spirulina for colouringand some chopped dark choc on top. Yummy

Here’s a super easy high carb high (healthy) fat snack idea because your body doesn’t only need protein to function properly.

NUT BUTTER STUFFED RICE BALLS 

I mixed white rice flour with tapioca flour and added some hot water to the mix until you have a dough. just add more flour/water if too dry or too wet.

shape into balls and add some nut butter/and or nuts in the middle (I used almond).

Coat in some sesame seeds/and or nut crunch (I used hazelnuts) and fry in sesame oil 

I made a savory version too by leaving the filling out and adding some soy sauce into the pan together with the sesame oil.

my happy place is when I am surrounded by nature, wind in my hair (literally) and forgetting about my worries, not thinking about my looks, my weight, my achievements, my failures, my future, my past and am completely present and calm!

I find when things get to overwhelming and anxiety takes over, its often helpful to remind myself that I only have so much time on this amazing planet and should spend it wisely by NOT taking ALL things too SERIOUSLY.

I miss my happy place
