Wow I highly recommend making these for lunch or as a snack in-between meals.
Super high in protein as they’re made of yellow split pea& chickpea flour.
Mix 1 cup gram/chickpea flour with ~1 cup water, salt, nutritional yeast, spices like herbs/smoked paprika, curry powder and stir until you have a smooth batter
In a pan fry some veggies (I used frozen spinach, pepper, courgette) and then mix in the batter.
Pour in some muffin shapes and then (optional) add more veg on top:) (baby tomato + coriander)
Then baked for ~30min (180°)
Super tasty:)

I used phitzee recipe but changed a few Ingredients:
I mixed rye flour with coconut flour, added chopped apples and used mashed banana instead of apple puree. Omg so yummy.
Then coated them in cinnamon & coconut sugar. Insane !

In a bowl mix 1:1 chickpea flour and water (adjust if too runny or too thick). Add to a blender with a handful of spinach, some flax seed, salt, nutritional yeast, smoked paprika (and whatever you like) and blend for a couple seconds.
Heat a pan with some oil and fry your pancakes. They go really well with a great dip and salad or with some tofu scramble

Have you ever tried tahini in desserts? Sesame paste is such an amazing food, it goes in everything, savory meals, dressings, desserts…
Here I mixed ground pumpkin seeds, oats and walnuts with tahini and then pressed the mixture in some muffin tins. The cups are not super sweet so you could always add some syrup.
I melted some vegan chocolate (black and white) and poured in those little cups. Then added drops of the other chocolate to shape some cute hearts:)
Leave to set in the freezer:)

I can’t remember how many times I cried during my eating disorder recovery, because the guilt and shame rushing in every single time I ate something, was too much for me.
I still occasionally experience guilt around food and it frustrates me because FOOD SHOULDN’T BE SCARY.
what helps me now to cope is to remember, that food keeps me alive, it’s a necessity and I don’t want to miss out on making memories.
Food is fuel and I love it. Can’t and won’t deny it!

There are so many versions available on Instagram but I love sovegan’s recipe.
I only used oat flour and peanut butter for the base,
dates and peanut butter for the middle base and then salted peanuts and some dark chocolate for the top layer!!
