FLUFFY VANILLA CREAM & APPLE STUFFED MINI TARTS 

I am OVER THE MOON about how those little fluffs turned out.

I had some leftover bread dough and my sweet tooth cravings told me to make sth sweeeet.

For the filling I used:

1.5 handful cashew nuts
3 large medjool dates
1/2 medium apple

-all soaked in hot water for 10 min

Blend together with:

Splash of (oat)milk
Splash of water
1.5 tbsp vanilla extract /powder
I used vivolife protein powder

Press dough in mini muffin tins and fill with your vanilla cream.

Add some apple and hazelnuts on top and bake for 25 min until golden brown

this was totally unplanned and totally against all “how to make sushi” rules 

BUT LOOK AT THOSE COLOURS WOULD YOU 

I found some nori sheets in my cupboard and decided to use my leftover rice to make something resembling sushi.

I simply heated my nori sheets in a pan, on two of them I spread some miso paste, on the other two some tomato puree and added leftover rice on it to make it stick to the nori.

Added raw courgette, carrot, red pepper, spinach leaves, beetroot and rolled them up. Wrapped in some cling film and popped in the fridge for 30 min.

Cut into pieces and served with soy sauce ♥️

Ps: the reality is-half of the pieces didn’t hold together they didn’t make it into the picture

GRANOLA & YOG BREAKFAST JAR 

I don’t know yet how people manage to make those filled jars look super fancy and then also get the lighting right, because I really struggled.

However, filling empty jars with food is an amazing way of reusing and recycling things and ideal for those who need a quick breakfast in the morning or have to take their breakfast to work.

I simply layered homemade granola with alpro mango yoghurt and added some warm blueberries on top (heated in the microwave). added some walnuts and banana slices and date syrup 

It felt fancy until everything got mixed together and it looked less appealing while eating but was suuuuper tasty!

10 FACTS ABOUT MYSELF

I hope you don’t mind me not posting food for a change but rather introducing myself a lil bit, that usual “person behind the pictures” kind of post 

I chose 10 pictures that I thought represent my personality and character. So here we go:)

Pic 1:
I’m 26y/o from Germany currently living in the UK, cause a girl gotta her heart (especially when stolen by an English man )

I got a Bachelor of Music studying orchestral performance and it was the most joyful and the most painful experience of my life

Pic 3:
I’ve been vegan for 2.5 years and it changed me entirely as apparently now occasionally stumbling upon blackberries in the forest seems to make me incredibly happy

Pic 4:
I’m a passionate runner, it helps clear my head and forget about everything else, tho I don’t know when I’ll ever be able to put myself through an actual Marathon. One of my life goals but so far I only managed the first half.

5:
I suffer from anxiety and depression plus occasional panic attacks BUT I’ve got a cat, who when he comes to cuddle, calms me down and helps me breath deeply

6:
I freaking love baggy clothes and would walk around in them all the time if I was the only person to live on this planet.

7:
I deeply care about our planet and I only truly feel free when surrounded by nature. Maybe it’s because I went to a Waldorf school for 13years 

8:
I barely EVER drink alcohol but IF I have anything now and then it has to be a giant glass of GIN (n tonic)

9:
I suffered from an eating disorder for mannyyy years incl.yoyo dieting, bulimia nervosa (extreme excessive exercise to compensate) until diagnosed anorexia nervosa. thankfully my body pulled me out of it bc I was so freaking STARVED

10:
HENCE my OBSESSION when it comes to food and passion about a world of nourishment and fuel, energy, fun and wonders of endless combination of flavours etc.

BAKED SPICY CAULIFLOWER WINGS 

oh my sweet jesus these were SO good. I cannot tell you how IMPORTANT it is for you to make them ASAP.

I recently bought the “how not to die cookbook” by nutrition_facts_org by michaelgregermd Dr. Michael Greger and it’s one of the recipes in there.

I made my own hot sauce though but the recipe is bomb.

Ingredients:

1 head of cauliflower – cut into florets
45/50g chickpea flour
garlic salt/salt
 Nutritional yeast (2tbsp)any additional spices you like

Mix batter together by adding water to the dry ingredients until you have a runny batter.

Coat your cauliflower florets in it and bake for about 15min.

HOT SAUCE:

I mixed some of the leftover batter with 1 tbsp harissa paste, 1tbsp tomato puree and chili powder.

Coat baked cauli wings AGAIN and bake for another 15-20min.

CASHEW CREME:

1 cup (soaked for 1h in water) raw cashews
1/3 cup lemon juice
1 clove garlic
salt
dried herbs

Blend together and serve with your spicy wings 

Will definitely have more often.

Those will help me to accept that it’s Monday and hopefully get me through the week.

Don’t they look unreal? Like candy 

All you need is some large dates
(Medjool ones are perfect), nut butter of choice (highly recommend manilife_ or meridianfoods) and vegan chocolate to coat them in.
Freeze after you melt your chocolate and enjoy after a few hours

Inspired by itsahealthylifestyle and damn this is by far my most favourite combination so far.

Spices are extremely healthy and it’s so beneficial to add them whenever you can.

Cooked my oats with

1/2 tsp turmeric
1/4 tsp cloves
1/4 tsp cardamom
1 tsp cinnamon
1/4 tsp allspice
1/4 tsp ground ginger
+ pinch of sea salt

Toppings: greek soy yoghurt, homemade date syrup, mixed nuts, pumpkin seeds, apple/banana, more cinnamon

So so good. Will have again
